Hmm... I consider the minimum number of any semi-auto's mags to be six. Chiefly because I intend to keep my firearms for a lifetime, and those things do break. I've got a pistol I really like - but I only have three magazines. The gun is now all but a safe queen.
For ARs, the answer is LOTS. They're cheap, widely used, threatened by a host of politicians, will always (hopefully) be in demand, and should make excellent trade bait. I'd buy a range of steel, aluminum GIs, Brownells, etc., as well as Magpuls. I wouldn't trust plastic for what could very well be a multi-generational firearm. However, for current use, Magpuls shine.
Minimum AR mag count: 12?* And several rebuild kits: for the chilluns. Don't forget the stripper clips and spoons.
Like to hear other opinions.
* This is per AR-15. If you have multiple ARs, the total amount of mags will increase dramatically with each firearm.
